DASH-Friendly Turkey Chili with Beans
Ingredients
- 1 tablespoon olive oil
- 1 pound lean ground turkey 93% lean or leaner
- 1 medium onion chopped
- 1 medium red bell pepper diced
- 3 cloves garlic minced
- 1 can (15 oz) low-sodium kidney beans rinsed and drained
- 1 can (15 oz) low-sodium black beans rinsed and drained
- 1 can (28 oz) diced tomatoes no salt added
- 1 cup low-sodium chicken broth
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and bell pepper; sauté for 4–5 minutes until softened.
- Add garlic and ground turkey. Cook until turkey is browned and cooked through, about 6–7 minutes, breaking it up with a spoon.
- Stir in chili powder, cumin, smoked paprika, and black pepper. Cook for 1 minute to toast the spices.
- Add kidney beans, black beans, diced tomatoes, and chicken broth. Stir to combine.
- Bring to a boil, then reduce heat and simmer uncovered for 25–30 minutes, stirring occasionally.
- Taste and adjust seasoning if needed. Serve warm, garnished with fresh cilantro or avocado if desired.
