Vegan Lentil “Meatballs” with Tomato Sauce
Ingredients
- 1 cup cooked lentils
- 1/2 cup breadcrumbs use gluten-free if needed
- 1 small onion finely diced
- 2 cloves garlic minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1 cup tomato sauce for serving
- 1 tablespoon olive oil for baking or frying
Instructions
- Preheat oven to 375°F (190°C).
- In a mixing bowl, mash cooked lentils with diced onion, minced garlic, breadcrumbs, salt, black pepper, oregano, and basil until combined but still slightly chunky.
- Form the mixture into small meatballs (about 12–16 depending on size).
- Place meatballs on a baking sheet, drizzle with olive oil, and bake for 20–25 minutes, turning halfway through until golden brown.
- Heat tomato sauce in a skillet over medium heat.
- Add baked lentil meatballs to the sauce and simmer for 5 minutes to coat.
- Serve warm with pasta, rice, or as a sandwich filling.
