Vegetarian Sushi Rolls with Avocado & Cucumber
Ingredients
- 1 cup sushi rice uncooked
- 1 1/4 cups water
- 3 tablespoons rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 4 sheets nori (seaweed)
- 1 medium cucumber julienned
- 1 medium avocado sliced
- 1/2 cup carrot julienned
- 2 tablespoons soy sauce or tamari for serving
Instructions
- Rinse sushi rice under cold water until water runs clear. Combine rice and water in a saucepan, bring to a boil, then cover and simmer for 15 minutes until water is absorbed.
- Mix rice vinegar, sugar, and salt in a small bowl until dissolved. Fold into cooked rice and let cool slightly.
- Place a sheet of nori shiny side down on a bamboo mat. Spread a thin layer of rice over nori, leaving a 1-inch border at the top.
- Arrange cucumber, avocado, and carrot strips across the center of the rice.
- Using the mat, roll the sushi tightly from the bottom, sealing the edge with a little water.
- Slice each roll into 6–8 pieces with a sharp knife. Serve with soy sauce or tamari.
